It's Also Good For Breakfast.

Pumpkin Crisp, y'all...you must try this simple and delicious recipe. I love anything with pumpkin in it, and this dish is a perfect fall dessert.

Pumpkin Crisp

1 15 oz. can pumpkin
1 cup evaporated milk
1 cup sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 package butter-recipe yellow cake mix (I use Duncan Hines.)
1 cup chopped pecans
2 sticks butter, melted

Stir together first 5 ingredients. Pour into a lightly greased 13x9-inch baking dish.

Sprinkle cake mix evenly over pumpkin mixture; sprinkle evenly with pecans. Drizzle butter evenly over pecans.
Bake at 350 degrees for 1 hour, or until golden brown. Remove from oven and let stand 10-15 minutes before serving.
Serve warm or at room temperature with whipped cream, if desired. (You desire it. You do!)

*Yes, I did have this for breakfast last Saturday. With some pumpkin spice coffee. It was a beautiful way to start my day, indeed!

I love pumpkin...anything! too bad it is only seasonal here and they still haven't started selling it yet. Once they do, I am going to buy a bunch, then cook it, puree it and put in the freezer for future recipes! All these recipes online are making me want some so bad!!!

If I ever find pumpkin I will make those, but I don't have cake mix either... hmm I will have to figure something out.

Ooooh, that looks so delicious. We love pumpkin stuff here. Do you have to serve it on a cute little pumpkin plate though, cause if you do, then I'm in trouble.

In other news...

I AM GOING TO DIE! Eclipse and Breaking Dawn don't arrive until SATURDAY!!!! I am totally kicking myself for not doing the 2-day delivery. AAAAAAAACKKKK! In the interim, I am taking a little looksee at Midnight Sun. I figure it can't harm my relationship with Edward - I am getting to know him better. It might be time to go to the meadow soon if you know what I mean! =)

I love this recipe. I made it once with no pecans since I was out of them, and it just wasn't the same.

I HAVE to eat it warm with whipped cream.

And for breakfast? Um, yea.

Yum! I used all my canned pumpkin over the weekend making yet another pumpkin cake but I'm getting more and making THIS!!

I love pumpkin too. Are you really surprised by that?

You know what's good? Every Fall, William Sonoma sells a pumpkin bundt cake mix. I add chocolate chips and make them into mini muffins, sprinkling them with powdered sugar. They are awesome!

Yes, I went out to the store, dragging a snotty nosed Gabe along, just to buy these ingredients. Then I came home and baked it right up. It's already half gone.

I did have my MIL over for dinner, and she loved it, too. So I sent her home with some. 'Cause my bootay does not need two sticks of butter all by itself, know what I'm sayin?

By the way, I use pretty much the same recipe for peach cobbler/crunch or apple. Just substitute canned peaches, for the pumpkin. It is yummy, but not as yummy as the pumpkin! Of course, you can use, apple pie filling, cherry pie filling etc. It is all good!!

Thanks Lula for telling us about the pumpkin! It was way better than any of the fruity ones!
